Use dry unseasoned ramen noodles and cook them for a short time to keep them slightly crunchy․ Slightly crunchy ramen noodles pair well with a hearty sauce․ This vegan recipe features ramen noodles in a savory-sweet, tangy sauce, along with optional tofu or other vegetables․

The sauce contains water or vegetable broth, soy sauce, dark soy sauce for coloring, cornstarch, sugar or other sweetener, vinegar or lemon juice, pepper, hot sauce, sesame oil, and garlic as optional ingredients․ Add soy sauce, sugar or other sweetener, and rice vinegar or lemon juice to the sauce to taste․ Sauté extra-firm tofu and oyster mushrooms in oil before serving with the sauce․
As the sauce cooks, cornstarch in the sauce will cause it to thicken to the point that it sticks to a spoon and the noodles․ Stirring during cooking helps prevent the cornstarch from settling and sticking to the pan․ One error to avoid is cooking the cooked ramen noodles in the sauce, which can reduce their chewiness․
Serve hot noodles with scallions and sesame seeds or plain․ Other vegetables or tofu or mushrooms can be added to this dish․ Additional sauce may be needed if other ingredients are added to prevent the noodles from becoming dry․

Why you'll love this recipe
- Half-cooked instant noodles are chewy in the middle because they cook further in sauce instead of fully softening in hot water․
- The versatile sauce recipe is designed to use different soy sauces, sweeteners, vinegars, and hot sauces that you might have on hand and prepare them the same way․
- Other additions, such as tofu or vegetables, can also be cooked in the same pan as the noodles․ All these foods will be covered with the thick sauce, just like the noodles․
- Cornstarch can be used to extend other limited ingredients in your kitchen by thickening liquids such as water or broth to serve with ramen noodles․
- Dark soy sauce is optional for taste and coloring․ Other ingredients can be used to make the noodles if you don't have dark soy sauce․
- Scallions and sesame seeds add a crunchy, nutty flavor․ Plain noodles can be eaten without other toppings, if preferred․

While the noodles cook, heat a pan over medium-high heat and add a little oil.
- 6
Sauté the vegetables, mushrooms, or tofu for a few minutes until cooked to your liking.

- 9
Add the noodles to the slightly thickened sauce and mix well to coat.
