For Taco Night tacos, I chop cabbage and other taco ingredients in advance. I peel and toast tortillas and cook shrimp right before serving them in tacos with five large shrimp and dry cabbage in a creamy lime dressing. I like the mix of hot and cold taco flavors.

I suggest cooking shrimp in a cast-iron grill pan over medium-high heat until smoke starts rising, then adding one layer of shrimp and cooking for 2 minutes without moving them. You'll start to see the spice coating darken at the edges, and you'll know the shrimp are cooked. O-shaped curled shrimp are fully cooked and overcooked.
I use full-fat sour cream and gradually add lime juice to help keep the crema from sinking into the tortilla and making a zigzag pattern. Don't add all the lime juice at once. If the crema is too thin, it will push through the tortilla and take the cabbage with it. I use a piping bag to deliver the crema, but you can also cut off a corner of a sandwich bag.
I broil or dry-toast tortillas to form brown spots. I use metal taco holders to hold tacos upright while I add other taco ingredients to the tortillas. I serve pineapple salsa with a charred exterior on the side to add sweetness to the tacos (pineapple and shrimp go well together).
What makes this special
- The cabbage and other ingredients can be prepped ahead of time while you heat the pan and cook the shrimp and tortillas last.
- Each taco contains five big shrimp and other fillings that do not make the tortilla shell bend.
- The shrimp are cooked for 2 minutes on the first side and 60 to 90 seconds after flipping.
- A heated dry skillet or low burner setting can toast tortillas without added oil or butter.
- Stainless steel taco holders keep three ready-to-eat tacos upright for serving with crema and other toppings.
Ingredients
- •1 lb jumbo shrimp (450 g, 16/20 count, peeled, deveined, tails removed)
- •2 tbsp avocado oil (30 ml)
- •1 tsp smoked paprika (5 g)
- •1 tsp chili powder (5 g)
- •½ tsp ground cumin (2.5 g)
- •1 tsp kosher salt (6 g)
- •garlic powder
- •6 flour tortillas (small 6-inch tortillas)
- •1 cup purple cabbage (70 g, thinly shredded)
- •1 cup green cabbage (70 g, thinly shredded)
- •½ cup full-fat sour cream or Mexican crema (120 ml)
- •1 lime (juiced)
- •¼ cup red onion (40 g, finely diced)
- •¼ cup fresh cilantro (10 g, chopped)
- •1 jalapeno (medium, thinly sliced)
Instructions
- 1
Combine the shredded purple cabbage and green cabbage in a bowl. Keep the cabbage dry.
- 2
Whisk the full-fat sour cream or Mexican crema with the lime juice until the crema is thick enough to drizzle.
- 3
Pat the shrimp completely dry with paper towels. Toss them in a large bowl with 2 tbsp avocado oil, smoked paprika, chili powder, cumin, kosher salt, and garlic powder.
- 4
Heat a cast iron grill pan or outdoor grill over medium-high heat until wisps of smoke appear. Arrange the shrimp in a single layer and cook without moving them for 2 minutes. Flip and cook for another 60 to 90 seconds, until opaque with dark grill marks.
- 5
Warm the flour tortillas over a low gas flame or in a dry skillet until toasted brown spots appear.
- 6
Set 3 tortillas in stainless steel taco holders. Add cabbage to each tortilla, then place 5 large shrimp on each one. Drizzle with lime crema and top each taco with cilantro, red onion, and 1 thin jalapeno slice.
